Recipe: Ramen

Ramen is such a delicious, filling, and easy meal to make. Especially as the temperatures start to drop…but really, it’s delicious any time of year! It’s also a great meal if anyone in your house is feeling under the weather, it’s kind of like chicken soup with a kick. I like to whip this up when I have lots of extra shredded chicken and some fresh greens. This go-to ramen recipe is quick to throw together and perfect for a cozy night in…which we’re having a lot of these days!

RAMEN

INGREDIENTS:

- Jalapeño
- Scallion
- Garlic
- Ginger
- Shredded chicken
- Mike’s Mighty Ramen
- Furikake
- Chili oil
- Egg (1 per bowl)

Directions:

- Chop fresh jalapeños, scallions, garlic, and ginger.

- Toss all ingredients (except the egg) together, season to taste, heat until noodles are cooked and everything is warmed through.

- Add eggs last. For a soft boiled egg, submerge egg in boiling water for 6 minutes. For a hard boiled egg, submerge egg for 10 minutes.

*Spice Tip: When using jalapeño to add heat to a dish, use a mandoline to get your slices paper thin! It helps make the heat more palatable!
